The Babić grapes are grown at Testament Winery’s 47 hectare organic vineyard. The manual harvest was made in the middle of September. Fermentation with skin contact lasted 8 days. Spontaneous malolactic fermentation. Aged in stainless steel tanks and six months in used barriques.
Babić is a local Dalmatian red grape variety, originating from the UNESCO- protected Bucavac vineyard only 10 km from Testament Winery. The Testament vineyard, planted 10 years ago, is located on hills sloping down towards the Adriatic Sea, providing a permanent breeze that is evident in the wines. The vines grow in harsh conditions – in limestone karst with less than 20% soil – thus committing themselves to premium grapes.
The Dalmatian Dog is an excellent introduction to the grape Babić. It is an elegant red wine with dark ruby colour. It has aromas of the local Makarska sour red cherry and Dalmatian herbs. It is a medium-bodied wine with nice fruit, lively acid and a firm structure.
